Tabby and Double Layer Fabric

I hope someone has an answer out there. I'm stuck. I have an older weaving pattern book, many of the designs I want to weave call for "tabby". I can't seem to find a simple, clear cut explanation as to what it, how do you set it up and how and when do you use it in a pattern? Also, when taking a fiber class years ago, someone did a double layer weave (two layers of fabric) from one weave. How do I do that. I can't seem to remember. I work on a 4 harness Oregon counterbalance loom.
Any advice would be great, I've been looking for years. Thanks.
